Theme Park Cooking Challenge Week 1 – Ginger Green Beans

As you all probably know, we LOVE recreating theme park recipes! Not only do we love theme parks and good food, as a mom of two kids with food allergies, it’s a fun way to empower them that they can still eat good food!

I thought a fun activity for the summer would be to recreate some of those theme park recipes. I searched the internet and cookbooks that we have and found a bunch of recipes. For the most part, we are using authentic theme park recipes that are straight from the theme park themselves. To choose the recipes, I have one of my kids close their eyes and pick out one from the bag. We never know what we are going to get!

Welcome to Week 1!

We recently cooked the first one: Ginger Green Beans from Storytellers Café at Disney’s Grand Californian Hotel & Spa at the Disneyland Resort.

Just for Kids Cookbook

Let me tell you all, it was GOOD! It was so good that I made it for myself again this week. It would be great as a side dish, as part of a stir fry or even just as a snack. The ginger is not over powering which I love. But it’s full of all good for you things! The ingredients are just simple: fresh green beans, vegetable oil (I used olive oil), ginger and a bit of salt. That’s it! The second time I made it, I added a bit of garlic for fun. As far as theme park recipes go, it’s a very healthy option!

Maybe even better than how healthy it is, is it was EASY and QUICK! The kids could cook this (with adult supervision). Cooking the whole dish could take as quick as 7 minutes if you want the green beans on a bit of the crunchy side or about 10-11 minutes if you want the green beans to be a little more floppy which is what I like. However, I will say cutting the green beans take the longest part but that’s ok, it’s so worth it!  We wash them, let them dry and then cut them.

This dish was pulled from the cookbook: Delicious Disney Just for Kids. We have not tried this dish at Disney but plan to now that Storytellers Café is open again. I’m excited to be able to compare dishes! Do you like green beans? What is your favorite way to eat them? Tell me in the comments!
