Theme Park Cooking Challenge – California Chicken

We are back with the Theme Park Cooking Challenge! We recently recreated the California Chicken from The Land Grille Room from The Land at Epcot. I hadn’t even heard of that restaurant so a little research led me to the D23 website which told me more about the restaurant. The Land Grille Room was in The Land pavilion from May 1986 to October 1993. It is now known as the Garden Grille Restaurant.
Epcot is my most favorite place in the whole world and I was so excited when my kids chose this recipe. This recipe came from “Cooking with Mickey Around our World” which is a cookbook from 1987. I found this gem on eBay and it has quite a few fun recipes including a lot I hadn’t seen before. I saw this recipe for California Chicken and I was sold.

The first step for this recipe is to marinate the chicken in lime juice. After it is marinated, cover the chicken in flour and then brown it in a skillet with oil. Once browned, you will cook in the oven. Meanwhile, make lime butter to cover the chicken with. When the chicken is done, cover it with lime butter and you are done! It was a pretty straight forward recipe which with our busy lives is ideal!
The recipe was delicious! We all liked the chicken and it was the perfect texture. I was afraid with all that lime, it would be strongly lime flavored, however, it really wasn’t! The lime gave it a little tang and enhanced the flavor as a whole but didn’t overpower it. I like that it was “lightly” fried which made it feel healthier. Is this a recipe we would make again? Absolutely!
